We chose our pink salmon for this re-tooled product as it is the most popular salmon segment and it has a milder taste than does sockeye salmon.

How we did it?
The secret, if you wish, to obtaining a tuna-like tasting salmon product lies in the way it is processed. We've taken our wild pink salmon, used the tuna processing method, which pre-cooks the fish, eliminates the “fishy” taste and provides a final product with a tuna-like taste.
