Keta salmon (or chum salmon) are widely dispersed along the Pacific coast, inhabiting more than 875 rivers and streams in British Columbia alone. The meatiest and firmest of all salmon, chums have a mild flavour, delicate pink to medium red flesh colour and low fat content.
